How Is Sparkling Wine Made?

Typically, a winemaker may use one of these methods to create a sparkling wine:

A. The Traditional Champagne Method (also called Methode Champenoise)

This method is used to make French Champagne, Spanish Cava, Italian Franciacorta, and other sparkling wines.

The winemaker puts the base wine with sugar and yeast in the bottle for a secondary fermentation. The wines are then aged, disgorged (removal of sediment), and dosed.

B. The Charmat or Tank Method

Used in making Italian Lambrusco and Prosecco and German Sekt, this process involves a secondary fermentation of the base wine in a pressurized tank to turn the base wine into sparkling wine. These wines are then filtered, dosed, and bottled without aging.

Many American sparkling wine makers also use this method.

C. Ancestral Method

One of the earliest methods, this process involves just one fermentation process at a low temperature. Depending on the winemaker, these wines may or may not be disgorged. So there may be residual sugar and sediment in the bottle.

Irrespective of the method, sparkling wine can come in these six sweetness levels:

  • Extra Brut: 0-6 6 g/L of residual sugar
  • Brut: 6-12 g/L of residual sugar
  • Extra Dry: 12-17 g/L of residual sugar
  • Sec or Dry: 17-32 g/L of residual sugar
  • Demi-Sec: 32-50 g/L of residual sugar
  • Doux: more than 50 g/L of residual sugar
