How is Dom Perignon P2 Made?

Dom Perignon uses slow-ripening Chardonnay and Pinot Noir grape varieties native to the 17 Grand Crus of Champagne and the Premier Cru of Hautvillers. The harvested berries are fermented and made into still wine. 

After tasting, the wines are blended. Then they undergo the second fermentation with yeast and sugar directly in the bottle. 

During aging, the Champagne rests on its lees (the dead yeast.) The wine's slow evolution is closely monitored by the winery’s Chef de Cave. Depending on the duration of cellaring, Dom Perignon offers three releases of the same vintage after disgorgement (removing lees):

  • P1: The original vintage Champagne ready for release after aging for eight years.
  • P2: The second Plenitude version left to age with the lees for 12 to 15 years before disgorgement.
  • P3: This Dom Perignon Plenitude is aged for 25 to 30 years before release.
