Palish yellow. Bright, subtle aromas of pear drop, white peach and lemon. Juicy and lively in the mouth, with fresh acidity giving cut to the wine's very intense citrus fruit flavors. Really titillates the taste buds on the very long, penetrating finish. Boillot told me he harvests Bâtard for healthy acidity (4.4 grams per liter in this case, with a pH of 3.13). "I don't pick it late at 14.5," he explained. "For me, Chardonnay at 12.5 is ripe. A white wine needs energy."(ST) 93-96
